Pea & Mint Soup

Ingredients (Serves 4)

1 tablespoon olive oil/butter

1 onion, finely chopped

1 clove of garlic, grated

1kg bag of frozen peas

1 litre of vegetable stock

1 handful of our dried peppermint leaves

Method:

Heat tablespoon of olive oil in large sauce pan.

Add chopped onion and cook over gentle heat, stirring constantly until softened.

Add grated garlic clove and cook for a few more minutes, continuing to stir.

Add the litre of stock, peas and peppermint leaves to the onion and garlic and bring to the boil.

Add salt and pepper and simmer for 10 minutes.

Once cooked, carefully remove from heat and blitz with a blender until desired consistency.

Sprinkle with our edible freeze dried petals and freeze dried violas to serve.

Additional variations and finishing touches could be crème fraise, sour cream, greek yogurt or a sprinkle of Parmesan cheese..
